Barley and wild rice or other grains that take about an hour to cook can be used interchangeably in this simple dish.
Heat in a large saucepan or deep skillet over medium heat:
2 tablespoons extra-virgin olive oil
Add and cook, stirring, until lightly browned, about 5 minutes:
10 ounces mushrooms, wiped clean and chopped
1 cup chopped onions
Add and cook, stirring, for 1 minute:
1/2 cup wild rice
1/2 cup pearl barley
1 clove garlic, finely chopped (optional)
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme leaves
Stir in:
4 cups chicken stock or beef stock
1/4 to 1/2 teaspoon salt
Bring to a boil. Cover and cook, without stirring, until the stock is absorbed, 50 to 60 minutes. Let stand, covered, for 5 minutes.
